This summery twist on chicken and vegetables is sure to make your taste buds do the happy dance.



  • 2-4 (6oz) boneless skinless chicken breast 

  • 1/2 cup balsamic vinaigrette 

  • 8 oz fresh mozzarella ball sliced

  • 1 ripe tomato

  • 1/4 cup basil 

  • 1/4 cup balsamic reduction 

  • All-Purpose Pit Barrel® Seasoning


  1. Marinate the chicken in balsamic vinaigrette overnight 

  2. Sprinkle Pit Barrel® All-Purpose rub on the chicken 

  3. Light your Pit Barrel® according to our lighting instructions

  4. Place chicken on the grill grate 

  5. Around 140° place tomato and mozzarella on the chicken. The cheese will start to melt 

  6. At 160° take the chicken off the grill. 

  7. Top with basil and balsamic reduction
